최근 몇 가지 재료로 육수를 직접 만들어보고 있는데, 기존과는 차별화된 맛을 내는 데 성공했습니다. 다양한 향신료와 소스, 고기를 넣어 라면 육수 스타일로 변형하는 중이라 더욱 기대가 됩니다. 저처럼 육수를 직접 만드는 분들이라면 어떤 재료를 더 넣으면 좋을지 궁금해할 것 같습니다.

한 주 전쯤부터 육수를 만들어보기 시작했어요. 시작은 냉동 상태로 만들어둔 대용량 육수였고, 기본적으로는 부추, 마늘, 타임, 당근만 넣었었죠.

며칠 간 기본 육수를 만든 뒤에 이번엔 라면 육수 스타일로 방향을 바꾸고 재료를 이것저것 실험하고 있어요. 중국 요리주, 고추장, 태국 후추, 태국 바질, 우스터 소스, 굴 소스, 참기름, 간장 등 다양한 재료들을 넣었고, 갈색빛으로 구운 암로스트 고기, 클로브, 스타 아니스, 생강도 추가했어요.

지금까지는 꽤 맛있게 잘 되어 10점 만점에 8점 정도 주고 싶습니다. 다만 더 맛있는 육수를 위해서 다른 조합이나 팁이 있다면 얻고 싶네요.

돼지족발을 넣어 육수를 끓이면 몇 시간 후에 꺼내서 먹으면 정말 맛있어요. 닭발이나 큰 돼지뼈, 돼지 척추도 가능합니다. 기름진 육즙이 육수에 배서 단백질이 아주 맛있어져요.

Get some pork trotters, and put it in the stock, and you can take it out after a couple of hours to eat and it is banging. Also doable with chicken feet and, big pork bones, pork spine. The fatty juices gets braised into the stock and the protein tastes delicious.

프로필에 육수 사진 있는데 지금 꽤 좋아 보입니다. 새로운 재료 넣고 약한 불에서 4시간 정도 끓이고 있어요. 내일 체에 걸러야 할 것 같은데 고기는 넣은 채로 둘지도 모르겠네요.
